Puff Pastry Pink Lady Apple Roses
Ingredients
- 1 Roll Puff Pastry
- 4-5 Tbsp Mixed Berry Jam
- 3 Pink Lady Apples
- 25g Butter
- 2 Tbsp Brown Sugar
- Icing Sugar, to dust
- Dollop Cream, to serve
Method
- Preheat the oven to 200°C.
- Cut the apples in half and remove the core and seeds.
- Using a mandolin or sharp knife, finely slice the apples into half-moons. Place in a bowl with 1 cup of water and the juice of ½ a lemon. Microwave for approximately 2 minutes to soften, then drain well.
- On a floured surface, lay out the puff pastry sheet and brush with the mixed berry jam. Cut it into 6 long horizontal strips.
- Layer the apple slices on the top part of each strip, ensuring they overlap on top of each other. Fold over the other half of the pastry towards the apples. Brush with butter and sprinkle with brown sugar.
- Grease a muffin baking tray with butter and set aside.
- Roll the pastry from one end to the other and place it into the muffin tin. Place into the oven and bake for 45 minutes to 1 hour, or until the pastries are golden brown.
- Remove from the oven and rest for 10 minutes.
- Remove apple roses from tray and sprinkle with icing sugar. Serve with cream if desired!
