Zucchini Pasta with Asparagus, Peas and Dukkah
Try spiralising zucchinis to make vegetable pasta and remove the carbs, for a delicious and healthy meal!
Ingredients
- 1 tablespoon extra virgin olive oil
- 2 garlic cloves, peeled and finely sliced
- 1 bunch asparagus, cut into thirds
- 1/2 cup peas
- 1 cup cherry tomatoes, halved
- 1 large handful baby spinach
- 1 small red chilli, finely diced
- 2 tablespoons dukkah
- 2 large zucchini, spiralised
- Salt and pepper to taste
- 1 lemon, halved, to serve
- Shaved parmesan to serve (optional)
Method
- Heat the oil in a large fry pan over a medium high heat. Add in the garlic and sauté for 2 minutes or until fragrant.
- Add in the asparagus and peas and sauté for 3 minutes. Next add in the cherry tomatoes, baby spinach, chilli and dukkah and sauté for 2 minutes or until the spinach has wilted. Season well with salt and pepper.
- Add in the zucchini noodles and stir well to combine.
- Turn off the heat and divide between two serving bowls. Top with a squeeze of lemon, shaved parmesan and an extra drizzle of olive oil.
