Stir Fry Snake Beans with Sweet Chilli, Lemon and Fried Shallots

Ingredients:
- 2 Bunches Snake Beans
- 2 Tbsp Peanut oil or cooking oil
- 3 Garlic cloves
- 2 Tbsp Sweet Chilli Sauce
- 1/3 Cup Fried Shallots
- ½ Lemon
- Salt and Pepper
METHOD
1. Cut the snake beans into approx. 5cm pieces and set aside.
2. Bring a wok or a large frying pan to high heat. Drizzle with the cooking oil and add the beans once hot. Stir through and crush the garlic cloves.
3. Stir fry for approx. 3mins. Add the sweet chilli sauce and stir fry for further 3 mins.
5. Add the fried shallots and keep stir frying for another couple of mins. Season with salt and pepper and squeeze the juice of ½ a lemon. Stir through and serve hot.
