Snaganaki Sausages with Tomatoes, Olives and Baguette

Ingredients
- 1 Baguette
- 600g Mix tomatoes
- 1 Spanish onion
- 5 Garlic cloves
- ½ Bunch parsley
- 1 Tbsp Greek spice mix
- 600g Saganaki sausages
Method

Preheat the oven to 180°C.

Slice the baguette into diagonal 1-2 cm slices. Spray or drizzle with olive oil and place in the oven for 7-10 minutes, or until golden brown.

Cut the larger tomatoes in half or into quarters if very large. Finely slice the onion and garlic, and pick the parsley leaves.

Heat a large casserole dish or frying pan over medium heat. Sear the sausages for approximately 5 minutes until golden, then transfer them to a baking tray.

Using the same pan, drizzle with olive oil and add the sliced garlic and onion. Sauté until the onions are soft and translucent.

Add the tomatoes and Greek spice mix to the pan. Season with salt and pepper. Cook on medium heat for 10 minutes until the tomatoes soften.

Place the sausages into the oven and bake for 12 minutes.

Once the sausages are ready, remove from the oven and slice into medium-sized pieces.

Place the sausage slices on top of the cooked tomatoes. Sprinkle with parsley leaves, drizzle with olive oil, and add a squeeze of lemon juice if desired.

Serve with the toasted baguette slices.
