Prawn Fried Rice

Ingredients 

  • 10 raw or uncooked king prawns
  • 2 rashers middle bacon
  • 2 tbsp olive oil
  • 1 x 250g pouch microwave long grain rice
  • 1/2 cup mixed vegetables
  • 3 cloves garlic
  • 1 tbsp soy sauce
  • 1 sprig spring onion to serve

*You can use leftover home-cooked rice for this dish as well. Freshly cooked, hot rice needs to be fully cooled before using otherwise it will turn mushy.

Method 

  1. Peel and de-vein prawns, leave tails on or take off if you prefer. Finely dice bacon.

  2. Add bacon and oil to a large frying pan or wok then place over medium heat. Cook, stirring for 2 minutes for the bacon to caramelise slightly.

  3. Add prawns and continue stirring for 2 minutes for the prawns to colour. Add crushed garlic and mix through before adding rice and frozen vegetables.

  4. Cook, stirring for 3 minutes for the rice and veggies to heat through.

  5. Drizzle with soy sauce and stir until the rice is coated evenly in the sauce.

  6. Divide between two serving bowls and sprinkle with spring onion, to serve.
