Panettone French Toast

βTis the season when you often find yourself with more than one panettone, thanks to generous loved ones.Β Here's one of three ways to wow the crowd and make sure nothing goes to waste!

IngredientsΒ Β
- 4 slices panettone, cut to 1.5cm thickΒ
- 4 eggsΒ Β
- 1/2 cup thick creamΒ Β
- 1/2 cup milkΒ Β
- 1/2 tsp ground cinnamonΒ Β
- 1Tbsp honey, plus extra for garnishΒ
- 200g fresh ricottaΒ Β
- 1 cup mixed berriesΒ
- 2 sprigs fresh thymeΒ Β
- 1/4 cup icing sugar (optional)Β
- 2 Tbsp unsalted butterΒ Β Β

METHOD
- Place the eggs, cream, milk, cinnamon and honey in a shallow bowl and whisk to combine.Β
- Heat a nonstick frypan over low heat and grease with a little bit of butter.Β Β
- Dip a slice of panettone in the egg mix on both sides briefly and shake off any excess.Β Β
- Cook for 1-2 minutes on each side. Repeat the process with the remaining slices.Β Β
- Top each piece with fresh ricotta and mixed berries. Sprinkle over a little bit of thyme, drizzle with honey and lightly dust with icing sugar.Β Β

This makes a great Christmas Day breakfast as well as being an excellent wayΒ toΒ use up leftover Panettone.
