Lemon Garlic Greek Chicken Gyros

Chicken Gyros, Greece’s ultimate street food, and my personal favourite! This recipe features a lemon and garlic sauce, a signature blend in Greek cooking that packs so much flavor into your chicken or pork. Gyros, traditionally served with tzatziki, crispy fries, thinly sliced tomato and onion, has the perfect combination of flavour and freshness. Kali Orexi friends!!

Serves: 4

Ingredients 

  • 1kg of Chicken thigh fillets (roughly 8 pieces) 

  • 3 tomatoes - thinly sliced

  • Parsley - finely cut 

  • 1 large red onion - thinly sliced

  • 1 tsp sweet paprika

  • Greek pita bread

  • Olive oil

  • Tzatziki dip

  • Potatoes for homemade fries

Marinade

  • ½ cup of Greek yoghurt 

  • ¼ of a cup lemon juice

  • 4 cloves of garlic 

  • 2 springs of fresh oregano 

  • 1 tbsp of Spice and Co - Greek herb & spice mix

  • 1 tbsp fine salt 

  • ½ tbsp of ground white pepper 

  • ⅓ cup of extra virgin olive oil

Method

  1. In a blender, combine lemon, garlic, oregano, spice mix, salt, pepper, and olive oil. Blend until smooth.

  2. In a bowl, mix the chicken thighs with the marinade and yogurt. Cover and refrigerate for at least 1 hour.

  3. Preheat the oven to 180°C (fan forced oven).

  4. Skewer the marinated chicken onto a vertical spit, and use an onion at the base. Layer the chicken tightly.

  5. Bake for 1 hour and 10 minutes, or until the chicken reaches an internal temperature of 75°C.

  6. Once cooked, shred the chicken with a carving knife and set aside.

  7. In a pan, heat olive oil and cook the pita on high heat for 1-2 minutes on each side.

  8. Once done, assemble the gyros by spreading tzatziki on your pita, then add in a layer of lemon and garlic chicken, tomatoes, onions, and fries. Garnish with parsley and sweet paprika. Enjoy!
