Moorish Spiced Grilled Lamb Cutlets Off the Rack

Ingredients:

  • 1 tbsp chopped thyme
  • 2 racks of lamb
  • 1 tbsp chopped rosemary
  • 1 tbsp chopped oregano
  • Zest of 1 lemon
  • 1 tbsp ground cumin
  • 1 tbsp dried oregano
  • 1 tbsp honey
  • Salt and pepper
  • ½ tbsp paprika
  • 4 garlic cloves
  • ¼ cup olive oil

Method:

  1. Cut the rack of lamb into individual cutlets and set aside.
  2. In a large mixing bowl, add the chopped thyme, chopped rosemary, oregano, cumin, paprika, zest of one lemon, honey, crushed garlic, salt, pepper, and olive oil.
  3. Bring a BBQ grill to high heat and grill the lamb cutlets for approximately 4 minutes on each side until golden brown and charred.
  4. Set aside on a warm plate to rest for at least 10 minutes.
  5. Serve with fresh lemon cheeks. Enjoy!
