Moorish Spiced Grilled Lamb Cutlets Off the Rack

Serves: 4–6
Ingredients:
- 1 tbsp chopped thyme
- 2 racks of lamb
- 1 tbsp chopped rosemary
- 1 tbsp chopped oregano
- Zest of 1 lemon
- 1 tbsp ground cumin
- 1 tbsp dried oregano
- 1 tbsp honey
- Salt and pepper
- ½ tbsp paprika
- 4 garlic cloves
- ¼ cup olive oil
Method:
- Cut the rack of lamb into individual cutlets and set aside.
- In a large mixing bowl, add the chopped thyme, chopped rosemary, oregano, cumin, paprika, zest of one lemon, honey, crushed garlic, salt, pepper, and olive oil.
- Bring a BBQ grill to high heat and grill the lamb cutlets for approximately 4 minutes on each side until golden brown and charred.
- Set aside on a warm plate to rest for at least 10 minutes.
- Serve with fresh lemon cheeks. Enjoy!
