Ingredients:
400g Lychees
1 Avocado
¼ Spanish Onion
¼ Bunch Coriander
2-3 Limes
1 Jalapeño Chili
1 Tbsp Agave
1-2 tsp Tabasco
Salt & Pepper
Olive Oil
Method:
Peel and remove the seeds from the lychees, then place them into a bowl.
Finely slice the avocado and cut it into small dice. Add the diced avocado to the bowl.
Finely slice the onion and jalapeño, then add them to the bowl.
Wash and chop the coriander leaves, adding them to the bowl (reserve some for garnishing at the end).
Drizzle with olive oil, then squeeze the juice of 2-3 limes (approximately 100ml). Add the Tabasco and agave, and season with salt and pepper. Mix everything together.
Refrigerate the ceviche for 30 minutes to chill.
Remove from the fridge and serve chilled, garnished with reserved coriander.
