Green Beans and Lima Beans in Tomato Sauce

Prep time: 10 minutes 

Cooking time: 15 minutes  

Serves: 4 

Ingredients

  • 500g Green Beans  
  • 500ml Tomato & Olive Sauce 
  • 400g Lima Beans  
  • ¼ Bunch Parsley
  • Salt and Pepper
  • Olive Oil
  • Water

Method

  1. Prep the green beans by cutting off the tops and keeping the tails. Wash, pick, and finely chop the parsley. Set aside. 

  2. Place the tomato sauce in a casserole dish and bring to medium-high heat. Rinse the jar with ½ cup of water and add to the sauce. 

  3. Add the beans and stir. Bring to a boil and cover with a lid. Cook for 10-12 minutes then uncover.  

  4. Drain the lima beans and add to the pan. Cook for 3 minutes then turn off the heat. 

  5. Serve the green beans hot, seasoned with salt and pepper, sprinkled with freshly chopped parsley, and drizzled with olive oil. 

Chef's Tips:

Serve as a side dish or make it a main by adding some chicken, chorizo or your choice of fish.
