Green Beans and Lima Beans in Tomato Sauce

Ingredients
- 500g Green Beans
- 500ml Tomato & Olive Sauce
- 400g Lima Beans
- ¼ Bunch Parsley
- Salt and Pepper
- Olive Oil
- Water
Method
- Prep the green beans by cutting off the tops and keeping the tails. Wash, pick, and finely chop the parsley. Set aside.
- Place the tomato sauce in a casserole dish and bring to medium-high heat. Rinse the jar with ½ cup of water and add to the sauce.
- Add the beans and stir. Bring to a boil and cover with a lid. Cook for 10-12 minutes then uncover.
- Drain the lima beans and add to the pan. Cook for 3 minutes then turn off the heat.
- Serve the green beans hot, seasoned with salt and pepper, sprinkled with freshly chopped parsley, and drizzled with olive oil.
Chef's Tips:
Serve as a side dish or make it a main by adding some chicken, chorizo or your choice of fish.
