Focaccia Pizza
Ingredients
Dough
1 tsp (4g) dried yeast
1 tsp honey
1 tsp fine salt
400g bread flour
2 tsp olive oil
320g room temperature / slightly warm water
For Pizza Topping
1/4 cup pizza sauce
80g salami
150g mozzarella, sliced
Basil leaves, to serve
Hot honey, to serve
Method
1. In a large bowl, whisk together the water, yeast, honey and olive oil.
2. Add the flour and salt and mix with a wooden spoon until you create a shaggy, sticky dough. Cover and rest for 30 minutes
3. Stretch and fold the dough. Leave for another 30 minutes, then stretch and fold the dough again.
4. Place in the fridge, covered,
overnight, or up to 24 hours.
5. Remove from the fridge and transfer to a lined, oiled sheet pan or brownie tin. Stretch to the corners of the tin. Cover and allow dough to rise until doubled in size - about 2 hours.
6. Preheat oven to 200C.
7. Press dimples into the focaccia, then top with the Pizza Sauce, mozzarella and salami.
8. Bake for 20 minutes, or until golden and brown.
9. Drizzle over chilli honey and garnish with basil leaves.
10. Slice into 8 pieces to serve.
