Crunchy Watermelon Salad with a Herb Salsa Verde
This summery fresh and crunchy watermelon salad tastes wonderful with BBQ grilled chicken or pork and a spoonfull of herb salsa verde drizzled over top.
INGREDIENTS:

1/4 watermelon

1-2 cucumbers diced into quarters

1 yellow capsicum finally diced

1 hand full of mint roughly chopped

1 hand full of coriander roughly chopped

3 shallots finally sliced
-
100g sharp Greek feta
For the Salsa Verde:
-
1 1/2 cup of fresh herbs (mint, parsley & coriander)

2 tbsp lemon juice
-
2 tbsp olive oil
-
1 tsp capers rinsed

Pinch salt
METHOD:

Combine all of the salsa verde ingredients into a food processor, pulsing them until they come together as a smooth paste. Set aside while the salad is being made.

To make the salad; Slice the watermelon into small cubes (1- 1 1/2 cm), combine the watermelon, diced cucumber, capsicum, shallots and herbs into a large salad bowl. Gently toss to combine.

Serve the salad straight away with the feta crumbled over the top and the herb salsa verde on the side in a small bowl.
Prep time: 15 - 20 minutes
