Crispy Ham and Garlic Fried Rice

You're going to want to save this delicious little number! This easy fried rice recipe is a perfect quick mid-week meal, and a great way to use up any leftover rice! Taking inspo from Sinangag (which is Filipino Fried Garlic Rice) - this version fries smoked ham and a lot of garlic until crispy, which is then tossed through some rice with a simple soy sauce mix.

P.S. the smoked ham from @poacherspantry which was absolutely delishhhhh and crisped up a treat. Give this one a go!

Cooking time: 10 mins
Serves: 2-3

Ingredients 

  • 4 cups cooked long grain rice
  • 2 tbsp neutral oil
  • 200g smoked ham (sliced into squares)
  • 10 cloves garlic (finely diced)
  • 3 spring onions (sliced, whites and greens divided)
  • 1/2 tsp white pepper
  • 2 Tbsp light soy sauce
  • 1 Tbsp dark soy sauce

Method

 

1) Heat a wok over medium-high heat then add the oil. When the oil starts shimmering add the smoked ham and fry for 2-3 minutes until browned. Add the garlic and spring onion whites and fry for a further 4-5 minutes or until the garlic starts going golden brown and everything in the wok is crispy. 

2) Turn the heat to high then add in the rice and toss through to ensure the crispy bits are mixed through the rice. Add the white pepper and the soy sauces and mix through until the rice is coated, then remove wok from heat. Spoon fried rice into a bowl and turn out onto plate. Devour while hot and crispy!
