Corn Salsa

Ingredients
- 3 Corn Cobs
- 1 Red Capsicum
- ¼ Spanish Onion
- 1 Avocado
- ½ Bunch Coriander
- 50g Hard Feta Cheese
- Olive Oil
- 1 Tbsp Red Wine Vinegar
- Salt and Pepper
- 1 Jalapeno
Method
- Bring a pot of water to the boil.
- Peel off the corn husk and remove the silk. Place the corn in the boiling water for 10-15 minutes until softened and vibrant yellow. Drain well then slice off the corn kernels using a knife and place them into a bowl.
- Finely dice the red capsicum and the onion, and cut the avocado as small as possible. Add to the bowl with the corn.
- Wash and finely chop the coriander, including the stems, and add to the bowl. Season with salt and pepper, drizzle with olive oil, add the red wine vinegar, and toss well.
- Serve in a salad bowl, sprinkle with chopped coriander and feta cheese. Serve alongside your favourite protein.
