Christmas Seafood Platter

Ingredients 

  • 2x Cooked Lobsters
  • 2x Cooked Balmain Bugs
  • 1kg Cooked Prawns
  • 300g Chipotle Mayo
  • 110g Tuna Sashimi
  • 110g Salmon Sashimi
  • 110g Kingfish Sashimi
  • 1 Dozen Oysters
  • 250g Marinated Octopus
  • 3 Lemons
  • 500g Pink Rock Salt

Method

  1. Cut the lobsters in half lengthwise.
  2. Cut the Balmain Bugs in half lengthwise.
  3. Arrange the prawns, lobster, Balmain Bugs, and marinated octopus on a platter. Serve with chipotle mayo and lemon wedges.
  4. Arrange the sashimi on a platter and serve with soy sauce, wasabi paste, and pickled ginger.
  5. Arrange the oysters on a platter on a bed of rock salt and serve with fresh lemon wedges.
