Cherry Bingsu

An easy dessert that comes together in a blender!

This quick and refreshing twist on a classic Korean dessert is perfect for those warm days when you want something light, frosty, and full of flavor. With just a few simple ingredients, you can create a dreamy bowl of shaved ice topped with sweet and tart cherry sauce, vanilla ice cream, and fresh fruit.

Ingredients:

For the shaved ice:

  • 3 cups milk
  • 1/4 cup condensed milk
  • 1 pinch salt

For the cherry sauce:

  • 2 cups (250g) cherries, pitted and halved
  • 1/4 cup white sugar
  • 1/4 cup water
  • Juice of 1 lemon

To serve:

  • Halved cherries
  • Vanilla ice cream

Method:

  1. Make the shaved ice:

    • In a closed container, combine the milk, condensed milk, and a pinch of salt.
    • Stir well, cover, and freeze until solid (this can take several hours or overnight).
  2. Prepare the cherry sauce:

    • Pit and halve the cherries. Add them to a saucepan along with the sugar and water.
    • Simmer over medium heat for about 10 minutes, until the cherries have broken down and become syrupy.
    • Transfer the mixture to a blender, add lemon juice, and blend until smooth.
    • Optional: Pass the sauce through a sieve for a smoother texture. Set aside to cool.
  3. Assemble the bingsu:

    • Once the milk is frozen, break the block into chunks and blend it in a blender or food processor until fluffy and snow-like.
    • Divide the shaved ice between two bowls.
    • Arrange halved cherries around the edge of the ice.
    • Place a scoop of vanilla ice cream in the center.
    • Drizzle with the cherry sauce.
  4. Serve and enjoy:

    • Serve immediately and devour before it melts!
