Cherry Bingsu
An easy dessert that comes together in a blender!
This quick and refreshing twist on a classic Korean dessert is perfect for those warm days when you want something light, frosty, and full of flavor. With just a few simple ingredients, you can create a dreamy bowl of shaved ice topped with sweet and tart cherry sauce, vanilla ice cream, and fresh fruit.
Ingredients:
For the shaved ice:
- 3 cups milk
- 1/4 cup condensed milk
- 1 pinch salt
For the cherry sauce:
- 2 cups (250g) cherries, pitted and halved
- 1/4 cup white sugar
- 1/4 cup water
- Juice of 1 lemon
To serve:
- Halved cherries
- Vanilla ice cream
Method:

Make the shaved ice:
- In a closed container, combine the milk, condensed milk, and a pinch of salt.
- Stir well, cover, and freeze until solid (this can take several hours or overnight).

Prepare the cherry sauce:
- Pit and halve the cherries. Add them to a saucepan along with the sugar and water.
- Simmer over medium heat for about 10 minutes, until the cherries have broken down and become syrupy.
- Transfer the mixture to a blender, add lemon juice, and blend until smooth.
- Optional: Pass the sauce through a sieve for a smoother texture. Set aside to cool.

Assemble the bingsu:
- Once the milk is frozen, break the block into chunks and blend it in a blender or food processor until fluffy and snow-like.
- Divide the shaved ice between two bowls.
- Arrange halved cherries around the edge of the ice.
- Place a scoop of vanilla ice cream in the center.
- Drizzle with the cherry sauce.
