Vegan Black Forest Avocado Mousse Cups
Macerated Cherries Ingredients

16 large cherries, pitted and halved

1 tbsp (20g) maple syrup, or to taste
Avocado Chocolate Mousse Ingredients

1 large avocado (around 200g, weighed without skin and seed)

¼ cup (85g) maple syrup, or to taste

¼ cup (45g) dark chocolate, melted

3 tablespoons (45g) dairy-free milk
-
2 ½ tablespoons (15g) dutch-processed cocoa powder, or to taste

1 tsp vanilla extra, optional

1 tsp espresso powder, optional

Pinch of salt, optional
Assembling Ingredients

2 cups dairy-free whipped cream, chilled

Fresh cherries

Chocolate shavings
Method:

Mix cherries with the maple syrup. Set aside in the fridge until needed.

Add all the avocado chocolate mousse ingredients to a small food processor or blender. Blend until smooth.

In 3-4 serving glasses, layer the macerated cherries, chocolate mousse and whipped cream as desired. Top with fresh cherries and chocolate shavings. Serve immediately or store in the fridge until needed.
