BBQ Flank Steak with Classic Chimichurri

Cook Time: 10 minutes (plus resting time)

Ingredients

  • 2–3 flank steaks (approximately 700g)
  • 2–3 garlic cloves
  • 1 red chili
  • 1 tsp paprika
  • ½ bunch parsley
  • 1 tbsp dried oregano
  • ¼ cup red wine vinegar
  • 1 cup olive oil
  • Salt and pepper, to taste

Method

  1. Wash and finely chop the parsley, garlic, and chili.
  2. In a bowl, combine the parsley, garlic, chili, paprika, oregano, salt, pepper, red wine vinegar, and olive oil. Mix well until combined.
  3. Season the flank steaks with salt and pepper.
  4. Preheat your BBQ or griddle to high heat.
  5. Cook the steaks for 3–4 minutes on each side, adjusting for the thickness of the steak and your desired doneness.
  6. Once cooked, let the steaks rest for 10–15 minutes.
  7. Slice the rested steaks against the grain into ½ cm slices.

Serve with chimichurri sauce. Enjoy!
