BBQ Flank Steak with Classic Chimichurri

Ingredients
- 2–3 flank steaks (approximately 700g)
- 2–3 garlic cloves
- 1 red chili
- 1 tsp paprika
- ½ bunch parsley
- 1 tbsp dried oregano
- ¼ cup red wine vinegar
- 1 cup olive oil
- Salt and pepper, to taste
Method
- Wash and finely chop the parsley, garlic, and chili.
- In a bowl, combine the parsley, garlic, chili, paprika, oregano, salt, pepper, red wine vinegar, and olive oil. Mix well until combined.
- Season the flank steaks with salt and pepper.
- Preheat your BBQ or griddle to high heat.
- Cook the steaks for 3–4 minutes on each side, adjusting for the thickness of the steak and your desired doneness.
- Once cooked, let the steaks rest for 10–15 minutes.
- Slice the rested steaks against the grain into ½ cm slices.
Serve with chimichurri sauce. Enjoy!
