Barbecued Asian Spiced Chicken Wings

Ingredients
For the Marinade:
- 3 Tbsp soy sauce
- 2 Tbsp hoisin sauce
- 2 Tbsp honey
- 1 Tbsp sesame oil
- 3 garlic cloves, minced
- 1 tsp grated ginger
- 1 Tbsp rice vinegar
- 1 tsp Chinese five-spice powder
- 1kg (2.2 lbs) chicken wings
- Whole garlic bulb
- 1 red chili, thinly sliced (optional)
For the Garnish:
- 1 Tbsp sesame seeds, toasted
- Fresh coriander leaves
- Extra chilli slices (optional)
Method:
- In large bowl, combine soy sauce, hoisin sauce, honey, sesame oil, garlic, ginger, rice vinegar and Chinese five-spice powder. Mix until well combined.
- Add chicken wings to bowl and toss to coat them evenly. Cover and refrigerate for at least 2 hours or overnight for maximum flavour.
- Heat barbecue to medium-high heat. Lightly oil grates to prevent sticking.
- Remove wings from marinade and reserve marinade. Place wings on barbecue and cook for 20-25 minutes, turning occasionally and basting with reserved marinade, until wings are golden brown and slightly charred.
- Slice whole garlic bulb in half horizontally. Brush cut sides with a little sesame oil and sprinkle with a pinch of salt.
- Place garlic halves, cut side down, on barbecue alongside the chicken wings. Grill for about 10-15 minutes until caramelized and tender. Remove and set aside.
- If wings need a little more cooking, move to cooler part of barbecue and close lid. Cook for another 5-10 minutes until cooked through and juicy.
- Transfer wings and garlic to serving platter. Sprinkle with sesame seeds, fresh coriander, and chilli slices for garnish. Serve hot with lime wedges on the side.
Tips for Success

For extra smoky flavour, add soaked wood chips to barbecue.
