Bacon, Maple Syrup and Blueberry Pancakes

Ingredients
- 300g Bacon (Black Forest Smokehouse)
- 2 Punnets Blueberries
- 150ml Maple Syrup
- 50g Butter
- 350g White Wings Pancake Shaker
- Olive oil
- Icing sugar (Optional)
Method
- Preheat the oven to 180°C.
- Bring a large frying pan to high heat. Drizzle with olive oil and cook the bacon slices for approximately 2 minutes on each side or until golden brown and crispy.
- Place the bacon on a baking tray and set it aside.
- Prepare the pancake batter and cook them according to the packet instructions.
- Warm up the bacon in the oven for a couple of minutes before serving.
- Serve the pancakes with crispy bacon, blueberries, generously drizzled maple syrup, and dust with icing sugar if desired.
