Bacon, Maple Syrup and Blueberry Pancakes

Ingredients

  • 300g Bacon (Black Forest Smokehouse)  
  • 2 Punnets Blueberries 
  • 150ml Maple Syrup 
  • 50g Butter  
  • 350g White Wings Pancake Shaker 
  • Olive oil  
  • Icing sugar (Optional) 

Method 

  1. Preheat the oven to 180°C. 
  2. Bring a large frying pan to high heat. Drizzle with olive oil and cook the bacon slices for approximately 2 minutes on each side or until golden brown and crispy. 
  3. Place the bacon on a baking tray and set it aside. 
  4. Prepare the pancake batter and cook them according to the packet instructions. 
  5. Warm up the bacon in the oven for a couple of minutes before serving. 
  6. Serve the pancakes with crispy bacon, blueberries, generously drizzled maple syrup, and dust with icing sugar if desired.
