Vodka Pasta
Prep/ Cooking Time: 35 Minutes
Serves: 4
Ingredients:
- 3 tbsp Butter
- 1 Minced Shallots
- 2 Minced Garlic Cloves
- ½ cup Tomato Paste
- ½ tsp Chilli Flakes
- 2 tbsp Vodka
- 500g Dried Rigatoni or Penne Pasta
- ½ cup Thickened Cream
- ½ cup Grated Parmesan, plus more for serving
- Basil for serving
- Salt
Method:
- In large skillet, melt butter over medium heat. Add shallots and garlic and cook, stirring frequently, until they become softened.
- Add tomato paste and chilli flakes to the skillet. Continue cooking and stirring frequently until the paste thoroughly coats the shallots and garlic begins to darken.
- Pour Vodka into the skillet and stir to incorporate, making sure to scrape up any browned bits from the bottom of the skillet. Turn off the heat.
- In a large separate large pot, bring salted water to medium heat. Add 1/4 cup of reserved pasta water and the thickened cream to the skillet, stirring to combine, Add half of the Parmesan cheese and continue stirring until it melts. Turn off the heat and stir in the cooked pasta.
- Fold in the remaining Parmesan cheese, adding more pasta water (about a tablespoon at a time) if the sauce appears dry.
- Taste and season with salt if necessary. Serve the pasta topped with additional Parmesan cheese and torn basil leaves.
