Tomato Smoothie
Makes 4 cups.
INGREDIENTS
- 500g grape tomatoes
- 200g raspberries
- 300g pineapple (skin off and chopped into smaller pieces)
- ¼ cup walnuts
- 1 tbsp goji berries
- 5 basil leaves
- 2 cups water
METHOD
- Rinse the tomatoes and raspberries with water then transfer into a large blender. Add the pineapple, walnuts, goji berries, basil and the water and blend for 1 minute or until smooth.
- Divide into glasses and add a few ice cubes if you like your smoothie a bit colder.
