Sushi Rice Balls
Kids love sushi, these rice balls are a simple and quick to make alternative to a sandwich that you can get the kids involved in! Grated carrot is also great to add into the mixture, to entice your little ones with eating more vegetables.
INGREDIENTS:

1 cup cooked sushi rice (cooled)

1/2 cup edamame beans

1 tbsp nori flakes
METHOD:

Blanch the edamame beans in boiling water for a couple of minutes, then drain.

Combine in a mixing bowl the pre cooked sushi rice, edamame beans and 1/2 of the nori flakes. Using wet hands gently mix together.

Wet your hands again and roll out small balls, once all the balls have been rolled sprinkle over the top the remanding nori flakes.

These can be made the night before and kept in an air tight container in the fridge.
Makes: 6-8 balls
