Roasted Green Beans with Parmesan and Almonds

Cooking time: 15-20 minutes 

Serves: 4 

Ingredients

  • 500g Green Beans
  • ⅓ Cup Almond Flakes
  • 70g Parmesan Cheese
  • ¼ Lemon
  • ½ tsp Smoked Paprika
  • Olive Oil
  • Salt and Pepper
  • Chilli Flakes, optional

Method

  1. Preheat the oven to 200°C. Prep the beans by removing the tops and keeping the tails.

  2. Place the beans on a lined baking tray. Drizzle with olive oil, season with salt and pepper, and sprinkle with paprika.

  3. Add the almond flakes and grate the parmesan cheese on top and toss well. Place the tray in the oven and roast for 15-20 minutes, tossing every 7 minutes, until the beans turn golden brown.

  4. Remove from the oven, sprinkle with chilli flakes if desired and grate the zest of ¼ of a lemon. Serve hot.
