Roasted Dutch Carrots With Honey, Balsamic & Blue Cheese

Ingredients
- 2 Bunches Dutch Carrots
- 1 Tbsp Italian Mixed Herbs
- Salt and Pepper
- 100g Blue Cheese
- Olive Oil
- 1 Tbsp Caramelised Balsamic Vinegar
- 1 ½ Tbsps Honey
- 2 Tbsps Water
Method
- Preheat the oven to 200°C.
- Trim carrot stems, leaving 1 inch attached. Wash and pat dry.
- Cut the carrots in half lengthways and place on a lined baking tray.
- Add the water, honey, and caramelised balsamic, and drizzle with olive oil. Season with salt and pepper, and sprinkle with Italian herbs. Toss to coat.
- Place into the oven and roast for 20-25 minutes until golden brown and caramelised.
- Tear the blue cheese on top and mix through. Serve hot on a platter.
