Roasted Dutch Carrots With Honey, Balsamic & Blue Cheese

Cooking time: 20-25 minutes  

Serves 4 

Ingredients

  • 2 Bunches Dutch Carrots
  • 1 Tbsp Italian Mixed Herbs
  • Salt and Pepper
  • 100g Blue Cheese
  • Olive Oil
  • 1 Tbsp Caramelised Balsamic Vinegar
  • ½ Tbsps Honey
  • 2 Tbsps Water

Method

  1. Preheat the oven to 200°C.

  2. Trim carrot stems, leaving 1 inch attached.  Wash and pat dry.

  3. Cut the carrots in half lengthways and place on a lined baking tray.

  4. Add the water, honey, and caramelised balsamic, and drizzle with olive oil.  Season with salt and pepper, and sprinkle with Italian herbs.  Toss to coat.

  5. Place into the oven and roast for 20-25 minutes until golden brown and caramelised.

  6. Tear the blue cheese on top and mix through.  Serve hot on a platter.
