Roasted Crispy Potatoes
Simple vegetable sides are all we need to bring a roast to life. Add this flavourful baked crispy potato dish to your next Sunday roast.
This dish also works well with sweet potato or a mix of potato and sweet potato roasted together.
INGREDIENTS:

1kg pack of Harris Farm raw sliced potatoes

2 tbsp olive oil

2 tbsp pure cream

1 tsp Dried oregano

3-4 whole garlic cloves

Pinch sea salt and pepper
METHOD:

Pre heat the oven to 180º

Add a good drizzle of olive oil to a heavy base oven proof fry pan or baking dish.

Lay the potato slices upright on a slight angle. Slices can be laid in a round row or positioned in different directions. Fill the whole fry pan so that they are tightly packed.

Pour over the cream, sprinkle over the dried oregano and a good pinch of sea salt, and freshly cracked pepper. Add the whole garlic cloves tucked in between slices.

Place in the oven to roast for 55-60 minutes or until golden and very crispy around the edges.
Serve with a roast dinner or a simple baked fish!
