Red Capsicum and Burrata

Pan fried red capsicums with a whole burrata on top.  Garnished with fresh oregano, olive oil, and caramelised balsamic.

Cooking time: 10 minutes  

Serves: 4 

Ingredients

  • 3 Red Capsicums  
  • ½ Tbsp Italian Mixed Herbs  
  • 5 Sprigs Fresh Oregano  
  • 1 Burrata Cheese  
  • Salt and Pepper  
  • Olive Oil
  • Caramelised Balsamic

Method

  1. Rinse and dry capsicums. Cut into ½ cm strips, discarding the seeds. 

  2. Bring a large frying pan to high heat, drizzle with olive oil and add the capsicum strips and Italian spice mix. Stir through. 

  3. Pick the oregano leaves and add ¾ of them to the capsicum, reserving some for garnishing. 

  4. Season with salt and pepper and cook for 10 minutes until the capsicum has softened.  Remove from heat and place on a platter.

  5. Drain the burrata and carefully place on top of the capsicums. Season with salt and pepper, and drizzle with olive oil and caramelised balsamic. 

  6. Garnish with oregano leaves and serve warm. 

Chef's Tips:

  • Serve as a side dish with your choice of protein.
  • Serve on a slice of toasted sourdough.
