Pork Fajitas

Ingredients
- 600g Pork Fillets
- 1 Yellow Capsicum
- 1 Red Capsicum
- 1 Green Capsicum
- 1 Spanish Onion
- 3 Garlic Cloves
- ½ Bunch coriander
- 10 Tortillas La Banderita
- 1 Tbsp Mexican Spice Mix
- 1 Lime
- 1 HFM Guacamole
Method
1. Pat dry the pork fillet. Cut the fillet into thin strips and place into a bowl.
2. Crush or finely chop the garlic and add to the pork. Add 1 Tbsp of the Mexican Spice mix and season with salt and pepper. Drizzle with olive oil, toss well and set aside.
3. Slice the capsicums into strips, finely slice half of the Spanish onion and place into a bowl. Sprinkle 1 Tbsp of the Mexican spice mix and season with salt and pepper, drizzle with olive oil and toss through.
4. Bring a griddle to high heat. Once hot, cook the pork strips for approx. 5-7mins until golden and charred. Remove from griddle and place into a bowl.
5. Quickly add the sliced vegetables to the griddle and sauté for approx. 5mins until soften and charred.
6. Remove from grill and add to the pork.
7. Finely chop the coriander and add the pork and vegetables. Squeeze the juice of ½ a lime and mix through. Check seasoning and keep warm.
8. Quickly grill the tortillas and keep them warm in a tea towel.
9. Serve your fajitas with guacamole, fresh coriander, lime juice and spicy mayo if desired.
