One Tray Garlic Salmon

Ingredients:
- 8 baby potatoes
- Olive oil spray
- Sea salt flakes
- 2 x 220g middle salmon fillets, skin on
- 1 bunch broccolini
- 1 bunch asparagus
Garlic Butter
- 50g butter
- 4 peeled garlic cloves
Method:
- Preheat oven to 210C.
- Place potatoes in a microwave-safe bowl. Add 3 tablespoons
water, cover with cling film and microwave on full power for 6-7
minutes, until fork tender. Transfer to a large baking tray lined
with baking paper. Smash with a fork or a glass jar, spray with a
little olive oil and season well with salt. Bake for 10 minutes. - Meanwhile, remove salmon from the fridge and pat dry with
paper towel. Trim woody stalk ends off broccolini and asparagus.
Melt butter in the microwave for 40 seconds. Add crushed garlic
and mix. - Remove tray from oven. Reduce temperature to 180C.
Add salmon, skin side down, and greens to the tray. Brush
everything with garlic butter. Return to the oven and bake for 12
minutes. Remove from oven and rest for 2 minutes before serving.
