Mini Mango Pavlovas
INGREDIENTS
- 4 egg whites
- 1 cup (110g) caster sugar
- 600ml thickened cream, whipped
- 1 mango, sliced
- 2 passionfruit, pulped
METHOD
- In a bowl add 4 egg whites.
- Beat until soft peaks form.
- Slowly add 1 cup caster sugar.
- Add 1 tsp cornflour and 1 tsp vinegar.
- Add 1 tsp vanilla and a pinch of salt.
- Beat until firm and glossy.
- Spoon mix onto a baking tray.
- Form into a disk shape.
- Bake for 20-25 minutes at 150 degrees.
- Top meringue with whipped thickened cream.
- Decorate with sliced mango and passionfruit.
