Lychee and Lime Gimlets
This fresh lime cordial works just as well with sparkling water and fresh mint for a virgin cocktail and can also be used in daiquiris. A gimlet is a bracing drink, best served ice cold. Lychees help soften the impact, but can also be replaced with a slice of pineapple, or some cold green grapes.
Makes 6.
INGREDIENTS
Fresh lime cordial:
- 1 1/2 cups/ 375 ml water
- 1 cup/ 200g caster sugar
- 1/2 cup fresh squeezed lime juice
- Zest from 3 limes, peeled in strips
Gimlet:
- 300 ml gin
- 120 ml lime cordial
- 6 lychees, peeled and seeded
METHOD
- To make the fresh lime cordial bring the water to a boil in a saucepan. Add the lime zest, sugar and juice. Stir until the sugar is completely dissolved.
- Reduce heat, cover and simmer for about 15 minutes.
- Remove from the heat and allow to cool. Pluck out the lime zest.
- Bottle in a container with a tight sealing lid and store in the fridge.
- To make the gimlets combine the gin and lime cordial in a jug with ice. Stir and then strain and pour into chilled martini glasses. Garnish with a peeled and seeded lychee.
