Leafy Mandarin Salad

Ingredients:

Honey Citrus Dressing:

  • ¼ Cup Olive Oil
  • 2 Tbsp Red Wine Vinegar
  • 2 Tbsp Honey
  • 1 Tsp Orange Juice
  • ½ Tsp Sea Salt
  • ½ Tsp Ginger

Salad:

  • 6 Cups Leafy Mix
  • 8-10 Mandarins
  • ¼ Cup Slivered Almonds
  • ¼ Cup Sliced Red Onions
  • ⅓ Cup Dried Cranberries
  • 1 Cup Parmesan Cheese - thinly sliced

Method:

  1. Prepare the dressing by combining olive oil, red wine vinegar, honey, orange juice, sea salt, and ginger in a jar or cup. You can mix these ingredients with a spoon or shake them vigorously if your cup has a lid. Set the dressing aside while you put together the salad.

  2. Place the spring mix in a spacious salad bowl. Slice the mandarins and then peel the skin off and scatter the segments over the salad. Add slivered almonds, cranberries, and red onions. 

  3. Drizzle the honey citrus dressing over the salad and toss thoroughly using salad utensils to ensure an even coating. 

  4. Before serving, sprinkle parmesan cheese over the salad and give it a gentle toss. 

 

Note: You can refrigerate this salad without dressing for up to two days. When ready to enjoy, scoop the salad into individual bowls and drizzle the dressing on top.
