Felafels with Baba Ganoush and Golden Peppers
This is the simplest of vegetarian suppers, particularly since there are so many good ready-made felafel brands available. Just warm them in a hot oven for 5-10 minutes, then serve with salad and baba ganoush. The golden peppers are optional, but do give it a good kick.
Serves 2.
INGREDIENTS
- 6 felafels
- 1 x 200 g tub baba ganoush
- 1 medium cucumber, finely sliced
- 2 radishes, shaved or finely sliced
- 1 small bunch of mint
- 2 tsp olive oil
- Juice of half a lemon
- 4 golden peppers, roughly chopped
- Pita breads to serve
METHOD
- Preheat oven to 220C/450F. Place the felafels on a baking sheet lined with baking paper and bake for 5-10 minutes until warmed through.
- Combine the sliced cucumber, radishes, leaves of the mint with the olive oil and juice of half a lemon. Toss to combine.
- Divide the baba ganoush between the plates. Add the felafels, cucumber salad and the diced golden peppers. Serve with pita breads on the side.
