Cumin beef with hummus
The temperature is slowly creeping back up as we head towards spring. Try this light and healthy meal that will have you shaping up for summer.A real crowd pleaser.
CUMIN BEEF WITH HUMMUS
Ingredients
- 250g good quality beef mince
- 6 tbsp extra virgin olive oil
- 1/2 large red onion, very finely sliced
- 1/3 tsp ground cinnamon
- 2 tbsp of ground cumin seed
- chilli flakes
- 1 lemon
- 2 cloves garlic, crushed to a paste with salt
- sea salt and black pepper
- 2 tbsp pine nuts, lightly toasted
- 1/2 bunch flat-leaf parsley, roughly chopped
- 1/2 bunch coriander, roughly chopped
- 1 baby cos
- 4 tbsp hummus
Method
- In a pan fry onion and garlic with spices until golden. Add beef mince and fry till golden and crisp. Season to taste.
- Take the pan off the heat and add pine nuts and chopped herbs.
- In a cos leaf add 1 tbsp of hummus. Top with beef mixture and a squeeze of lemon.
TIP: For a refreshing touch top with a dollop of natural yoghurt
