Creamy Gluten Free and Vegan Porridge with Mixed Nuts, Almond Butter, Seasonal Fruit and Coconut Syrup
Ingredients
- 1½ Cups Gluten Free Porridge
- 3 Cups Oat Milk
- 2 Corella Pears
- 75g Mixed Nuts
- 4 Tbsp Almond Chia Butter
- 125g Blueberries
- 150g Red Grapes
- 4 Tbsp Coconut Syrup
- Salt
Method
- Place the porridge mix in a medium-sized saucepan and add the oat milk. Add a pinch of salt and 1 Tbsp of coconut syrup. Stir well and bring to the boil over medium-high heat, stirring occasionally.
Meanwhile, finely slice the pear and set aside.
- Once the porridge starts boiling, turn down heat to medium and cook for 5-7 minutes, stirring until it becomes creamy and thick.
- Once the porridge has thickened to the desired consistency, serve it in a bowl. Top with a sprinkle of mixed nuts, blueberries, grapes, the sliced pears, a Tbsp of almond and chia butter, and a drizzle of coconut syrup. Enjoy!
