Christmas Ham Glaze 3 Ways

Sweet: Marmalade & Mustard Glaze
Ingredients
- 1 cup orange marmalade
- 1/4 cup soft brown sugar
- 2 tbsp Dijon mustard
- 1 orange, juiced & zested
Method

Combine marmalade, sugar, mustard, orange juice and zest in a pan.

Simmer until sugar dissolves and glaze is thick and glossy.
Spiced: Cherry Rum
Ingredients
- 1 cup Ham Jam
- 1/4 cup dried tart cherries
- 1/4 cup spiced rum
- 3 star anise
- 2 cinnamon sticks
- 1 tsp allspice berries
- 1 tsp whole cloves
Method

Combine Ham Jam, dried tart cherries, spiced rum, star anise, cinnamon sticks, allspice & cloves in a pan.

Simmer until dried cherries are plump and glaze has thickened then remove whole spices.
Smoky: Maple Bourbon
Ingredients
- 3/4 cup hot tomato chutney
- 1/4 cup maple syrup
- 1/4 cup bourbon
- 2 tbsp vino cotto
- Hot sauce to taste
Method

Combine tomato chutney, maple syrup, bourbon and vino cotto in a pan.

Simmer till combined, thick & glossy.
- Cool slightly and add hot sauce to taste.
