Choc Chip Pancakes

Ingredients

1 ¼ cup milk

1 egg

¼ cup melted butter

2 tsp vanilla extract

¼ cup sugar

1 ½ cup plain flour

2 ½ tsp baking powder

1 pinch salt

¾ cup chocolate chips

300ml thickened cream

cooking oil

1 punnet strawberries
Method
1. Add the milk, egg, melted butter, 1 tsp of the vanilla extract and sugar into a mixing bowl. Whisk until well combined.
2. Sift in the flour, baking powder and salt. Mix well until combined. Add the chocolate chips and fold them through.
3. In a separate bowl, pour in the cream, the remaining tsp of vanilla extract and beat with a hand mixer until hard peaks form. Set aside in the fridge for later use.
4. Bring a nonstick frying pan to medium low heat. Add some cooking oil of your choice and a little butter if desired, spread with a paper towel all around the pan.
5. Once hot, add 1 kitchen spoonful of the pancake batter and let it cook for 3-5 mins until golden. Carefully turn over and continue to cook for further 2-3 mins. Do one or two at a time depending on the size of the pan. Repeat with the rest of the batter until finish.
6. Meanwhile the pancakes are cooking, finely slice the strawberries and set aside for serving.
7. Once all the pancakes are done, spread them with some butter, arrange some sliced strawberries, add a spoonful of whipped cream and drizzle with maple syrup. Serve warm and enjoy!
