Celery, Apricot and Goat Cheese Salad

Serves: 4 

Ingredients

  • 4 Celery stalks  
  • 10 Dried Apricots  
  • 120g Marinated Goat Cheese  
  • 1 Tbsp Honey  
  • 1 Tbsp Red Wine Vinegar  
  • Salt and Pepper  

Method

  1. Trim off the white bottom ends of the celery and remove the leaves. Wash and finely slice the celery stalks into thin diagonal strips. 

  2. Finely slice the dried apricots and set aside. 

  3. Make layers with celery, apricots and goat’s cheese. Drizzle with goat cheese oil and red wine vinegar. 

  4. Season with salt and pepper and drizzle the honey. Garnish with some of the inner celery leaves.  

  5. Serve cold.
