Celery, Dried Apricots & Goat Cheese Salad

Ingredients
- 4 Celery stalks
- 10 Dried Apricots
- 120g Marinated Goat Cheese
- 1 Tbsp Honey
- 1 Tbsp Red Wine Vinegar
- Salt and Pepper
Method
- Trim off the white bottom ends of the celery and remove the leaves. Wash and finely slice the celery stalks into thin diagonal strips.
- Finely slice the dried apricots and set aside.
- Make layers with celery, apricots and goat’s cheese. Drizzle with goat cheese oil and red wine vinegar.
- Season with salt and pepper and drizzle the honey. Garnish with some of the inner celery leaves.
- Serve cold.
