Cauliflower and Gruyere Gratin with Breadcrumbs

Serves 4
INGREDIENTS:
- 1 brown onion
- 2-3 garlic cloves
- 1 cauliflower
- 200g gruyere cheese
- ½ cup HFM breadcrumbs
- 4 Tbsp grated parmesan
- 1 ½ cup milk
- 25g butter
- 2 Tbsp flour
- ¼ bunch parsley
- Salt and pepper
METHOD:
- Preheat the oven to 200◦C.
- In a small saucepan, on medium-high heat, add the butter and melt. Once melted, add the flour and mix well, using a whisk until a paste forms and starts bubbling. Slowly add the milk, mixing consistently, and bring to the boil. Season with salt and pepper, and once it reaches the boil and thickens, turn down to low and cook for further 5mins.
- Meanwhile, cut the cauliflower into medium size florets, finely slice the onion and garlic, grate the gruyere cheese, and finely chop the parsley.
- Place all the ingredients into a baking dish. Pour the thick sauce on top of the cauliflower and sprinkle over the breadcrumbs and gruyere cheese on top. Cook in the oven for 35mins until golden brown and crispy.
- Serve hot and garnish with some chopped parsley.
