Best Ever Haloumi Salad
This delicious (and we mean delicious) haloumi salad comes from a great little cafe in Mosman (a short walk from our shop) called Open Circus. On the menu it’s simply described as Haloumi with ‘best ever green salad’. And we think that’s spot on. Enjoy.
Ingredients:
Salad
- 1/2 Green capsicum, chopped
- 1 large cucumber, chopped
- 1 medium fennel, chopped
- Large handful of rocket
- Large handful of kale, stems removed, roughly chopped
- 1/2 cup pepitas, toasted lightly
- 1 cup green or red grapes, halved
- 1/2 bunch basil, leaves picked and roughly torn
- 250g Haloumi, sliced
- Pesto
Dressing
- 1 tablespoon honey
- 3 tablespoons lemon juice
- 6 table tablespoons extra virgin olive oil
- Sea salt
- Freshly ground black pepper
Method:
- Combine dressing ingredients (use a jar and shake to combine), season to taste.
- In a large bowl, combine the vegetables, grapes, basil and pepitas. Pour over enough dressing to coat and toss gently.
- Pat the haloumi slices dry with a paper towel to remove excess moisture. Heat a frypan over medium heat, add a little olive oil and fry haloumi slices in batches (1-2 minutes each side) and set aside.
- Divide salad among serving plates and top with haloumi slices. Add a generous dollop of pesto, garnish with some fresh chopped herbs and serve.
