BBQ Squid with Mango Dressing

Cooking time: 4 minutes
Serves: 2

Ingredients 

  • 4 x small squid, cleaned

  • 2 tbsp of olive oil 

  • Salt and pepper

Mango Dressing Ingredients

  • 1 x mango 

  • ½ lime rind

  • Juice of half a lime

  • Small handful of coriander

  • 1 x red bird's eye chili, deseeded

  • 1 tbsp of apple cider vinegar 

  • 3 tbsp oil

  • 1 tsp of sugar 

  • 1 tsp of salt 

Method

  1. Place the dressing ingredients in a food processor and blitz until well combined. Set aside in a serving bowl.
  2. Preheat the barbecue to high heat (~250C).
  3. Cover the squid tubes and tentacles with olive oil, salt and pepper. 
  4. Cook the squid over direct heat on the barbecue for 2 minutes each side.
  5. Remove from barbecue and slice the squid tubes into 1-2cm rings. Serve in a bowl with the dressing over the top and a sprig of coriander.
