BBQ Squid with Mango Dressing

Ingredients

4 x small squid, cleaned

2 tbsp of olive oil

Salt and pepper
Mango Dressing Ingredients

1 x mango
-
½ lime rind
-
Juice of half a lime
-
Small handful of coriander
-
1 x red bird's eye chili, deseeded

1 tbsp of apple cider vinegar
-
3 tbsp oil
-
1 tsp of sugar

1 tsp of salt
Method
- Place the dressing ingredients in a food processor and blitz until well combined. Set aside in a serving bowl.
- Preheat the barbecue to high heat (~250C).
- Cover the squid tubes and tentacles with olive oil, salt and pepper.
- Cook the squid over direct heat on the barbecue for 2 minutes each side.
- Remove from barbecue and slice the squid tubes into 1-2cm rings. Serve in a bowl with the dressing over the top and a sprig of coriander.
