This fillet has been gently hot smoked using Victorian Mountain Ash and Australian grown Rainbow Trout from the mountain streams of the Great Dividing Range. The fillet is then lightly seasoned with Alpine Pepper, which is a carefully considered formulation of peppery leaves of mountain pepper along with some of the dried and milled fruits of this high country shrub.
