Watermelon, Labneh and Pistachio Salad

Ingredients:
- ¼ Watermelon
- 200g Preserved Lemon and Herbs Labneh
- 3 Baby Cucumbers
- 4 Radishes
- ½ Cup Pistachios
- ½ Punnet Mixed Leaves Salad
- ½ Lemon
METHOD
- Cut the watermelon into 2cm dice and set aside.
- Wash and finely slice the cucumber and the radishes.
- Roughly chop the pistachios.
- Layer all the ingredients together on a platter and dollop the labneh on top of the salad.
- Season with salt and pepper, drizzle with the labneh oil and squeeze some lemon juice.
- Serve cold.
