Watermelon, Labneh and Pistachio Salad

Ingredients:

  • ¼ Watermelon
  • 200g Preserved Lemon and Herbs Labneh
  • 3 Baby Cucumbers
  • 4 Radishes
  • ½ Cup Pistachios
  • ½ Punnet Mixed Leaves Salad
  • ½ Lemon

METHOD

  1. Cut the watermelon into 2cm dice and set aside.
  2. Wash and finely slice the cucumber and the radishes.
  3. Roughly chop the pistachios.
  4. Layer all the ingredients together on a platter and dollop the labneh on top of the salad.
  5. Season with salt and pepper, drizzle with the labneh oil and squeeze some lemon juice.
  6. Serve cold.
