Vegetable Yellow Curry with Udon Noodles

Ingredients 

  • 1 Bunch Broccolini 
  • 2 Zucchinis
  • 1 Red Capsicum
  • 200g Spicy Thai Tofu   
  • ½ Bunch coriander 
  • 570g HFM Yellow Curry 
  • 500g Udon Noodles Fresh (Double Merinos) 

Method

  1. Cut off the bottom end of the broccolini, cut the zucchinis lengthways in half, then cut them into diagonal half-moons and cut the capsicum into approx. 3cm pieces. Set aside.
  2. Wash and finely chop the coriander and cut the tofu into small cubes. 
  3. Bring a pot with salted water to the boil for the noodles and bring a wok or a pot to medium heat. Drizzle with cooking oil and add the red capsicum, stir fry for 2 mins and add the zucchini, stir fry for another 2 mins and add the broccolini, stir fry for further 2 mins. 
  4. Add the sauce to the wok and bring to the boil. Add the tofu and turn down to low heat. Add the chopped coriander and stir through. 
  5. Cook the noodles in boiling water for 2-3 mins or as per packet cooking instructions and serve with the vegetable yellow curry. 
  6. Garnish with coriander leaves and fresh chillis if desired.
