Tropical Bircher Muesli

Cooking time: Overnight or 2 hrs cooling time
Serves: 4
Ingredients
- 2 Cups Oats
- 2 Tbsp Chia Seeds
- 350ml Coconut Water
- 375g Coconut Yoghurt HFM
- 2 Cups Milk
- 1 Banana
- 12 Jujube Fruits
- 3 Mangosteens
- 6 Achacha
- 1 Dragon Fruit
- 2 Tbsp Honey
- 150g Mix Nuts The Explorer Brookfarm Brothers Blend
Method

Place the oats and the chia seeds in a large bowl. Add the coconut water and mix through.

Place the 200g of the coconut yoghurt, banana and milk into a blender and blitz until well combined like a smoothie.

Pour the smoothie into the bowl with the oats and mix through well.

Grate the Jujube fruits with the sickest part of a box grater and mix through with the muesli. Place into the fridge and leave overnight or for at least couple of hours.

Before serving, peel the mangosteens and remove the segments from the hard shell. Set aside.

Remove the fruit from the inside of the achacha and slice small pieces all around the fruit until reach to the seeds. Set aside.

Cut the Dragon fruit into quarters. Peel off the skin and finely slice across each piece. Set aside.

Remove muesli from the fridge and arrange the prepped tropical fruits over the top of the Bircher muesli. Serve with the rest of the coconut yoghurt, sprinkle with the mix nuts and drizzle with honey. Enjoy cold.
