Tomato, Couscous, and Crispy Pita Salad

Ingredients
- ¼ Cup Couscous
- 400g Sweet Delight Tomatoes, or similar
- ¼ Spanish Onion
- 1 Bunch Coriander
- 1 Bunch Mint
- ½ Bunch Parsley
- 120g Crispy Pita Bread
- 1 ½ tsp Ground Cumin
- 2 Tbsp Red Wine Vinegar
- Olive Oil
- Salt and Pepper
Method

In a bowl, season couscous with salt, pepper, and olive oil. Add ½ cup of boiling water, mix, and cover with a lid or foil for 3 minutes. Uncover and fluff with a fork. Set aside to cool.

Half or quarter the tomatoes, finely slice the onion and wash and pick the herbs. Place in a salad bowl.

Add the couscous, salt, pepper, cumin, olive oil, and red wine vinegar. Break the pita into pieces and toss.
- Serve chilled or at room temperature.
