Tomato, Couscous, and Crispy Pita Salad

Serves: 4 

Ingredients

  • ¼ Cup Couscous 
  • 400g Sweet Delight Tomatoes, or similar
  • ¼ Spanish Onion  
  • 1 Bunch Coriander 
  • 1 Bunch Mint  
  • ½ Bunch Parsley  
  • 120g Crispy Pita Bread 
  • 1 ½ tsp Ground Cumin 
  • 2 Tbsp Red Wine Vinegar  
  • Olive Oil  
  • Salt and Pepper 

Method

  1. In a bowl, season couscous with salt, pepper, and olive oil. Add ½ cup of boiling water, mix, and cover with a lid or foil for 3 minutes. Uncover and fluff with a fork. Set aside to cool. 

  2. Half or quarter the tomatoes, finely slice the onion and wash and pick the herbs. Place in a salad bowl. 

  3. Add the couscous, salt, pepper, cumin, olive oil, and red wine vinegar. Break the pita into pieces and toss. 

  4. Serve chilled or at room temperature.
