Teriyaki Buk Choy (Green Shanghai) with Edamame Beans

Ingredients:
- 2 Bunches Buk Choy (Green Shanghai)
- 150ml Teriyaki Sauce
- 400g Edamame Beans
- 1 Tbsp Sesame Seeds
- Cooking oil
Method:

Start by bringing a pot of salted water to a boil.

Cut the Buk Choy in half lengthwise and set it aside.

Heat a large frying pan over high heat, add a drizzle of cooking oil, and when hot, place the Buk Choy halves with the inner side down. Sear them for 2 minutes until they turn golden. Remove them from the pan and set them aside. Repeat this step until all the Buk Choy has been seared.

While that's happening, put the edamame beans into the boiling water and cook for 2 minutes.

Add the teriyaki sauce to the pan and bring it to a boil. Place the seared Buk Choy back into the pan with the seared side facing up. Cook for 2 minutes while basting them with the sauce.

Drain the edamame beans and add them to the pan with the Buk Choy. Toss everything together for 1 minute, then transfer the dish to a serving platter.

Sprinkle the dish with toasted sesame seeds and serve it while it's still warm.
Tips:
- Use this flavourful dish as a side accompaniment for various meats or other Asian greens.
- Elevate it to a main course by serving it alongside rice, chicken, beef, or tofu.
- For quick toasted sesame seeds, heat them in a pan over medium heat for about 5 minutes.
