Sweet Potato Wedges

Ingredients:
- 1Kg Sweet Potatoes
- 2 Sprigs Rosemary
- ¼ tsp Garlic Powder
- ¼ tsp Smoked Paprika
- Salt
- Pepper
- Olive oil

Preheat your oven to 220°C.

Start by thoroughly washing and drying the sweet potatoes. Cut them in half lengthwise and then across, creating half-inch to one-inch wedges.

Finely chop the rosemary and set it aside for later use.

Arrange the sweet potato wedges on a baking tray lined with parchment paper. Season them generously with salt, pepper, garlic powder, and smoked paprika. Sprinkle the chopped rosemary over the top, drizzle with olive oil, and toss to coat the wedges evenly.

Make sure the sweet potato wedges are well spaced on the tray to prevent them from overlapping. If necessary, use two trays to ensure they cook evenly.

Slide the trays into the preheated oven and bake for 15 minutes. After this time, remove the trays from the oven and flip over the wedges.

Return the trays to the oven for an additional 20 minutes of baking time.

To add extra color and crispiness, switch the oven to the grill or broil function and leave the oven door slightly ajar. Grill the wedges for 2-3 minutes, keeping a close eye on them to prevent burning.

Once done, remove the sweet potato wedges from the oven and transfer them to a serving platter. Pair them with your favourite dipping sauce for a delightful snack or side dish. Enjoy!

- Serve with your favourite roast or grilled fish as a side dish or have it as a snack.
- Serve with your best choice of dipping sauce. (Aioli, tzatziki, chipotle mayo, etc).
