Superfood Nut Mix Clusters

Serves: 6

Ingredients:

  • 2 Cups Superfood Nut Mix
  • ¼ Cup Chia Seeds
  • 1 Cup Rolled Oats
  • 80g Butter
  • 80g Honey
  • 100g Dark Chocolate (70%)
  • ¼ Cup Fine Desiccated Coconut

Method: 

  1. Preheat the oven to 180°C.
  2. Place the superfood nut mix into a food processor and pulse a few times to break them down slightly.
  3. In a mixing bowl, combine the processed nuts with chia seeds and rolled oats.
  4. In a small saucepan, melt the butter and honey over medium heat until boiling. Stir and cook until golden brown (about 3 minutes).
  5. Pour the honey mixture into the nut mixture and mix thoroughly.
  6. Grease a muffin tray and divide the nut mix into 6-8 equal parts, reserving half a cup for later.
  7. Press the nut mixture into the muffin tray using a spoon (not too hard). Scatter the reserved mix on top without pressing.
  8. Bake in the oven for 10-12 minutes until golden. Remove and let cool for 15 minutes.
  9. In a small saucepan, fill it with ¼ water and bring it to a boil. Place a bowl on top and add broken chocolate pieces. Stir until melted and smooth.
  10. Drizzle the melted chocolate on top of the clusters, followed by the desiccated coconut, and then more chocolate.
  11. Place in the fridge for 30 minutes until set.
  12. Remove from the muffin moulds and serve at room temperature. Enjoy!
