Strawberry Mini Dutch Pancakes

Serves: 9 pancakes
Ingredients
- 4 eggs
- ¾ cup all purpose flour
- ¾ cup milk
- 1 tbsp sugar
- 1 tsp vanilla essence
- 2 tbsp butter melted and slightly cooled
- pure icing sugar for dusting
- Fresh strawberries cut in half or quartered
- Maple syrup for serving
Method
- Pre heat the oven to 200C.
- Place a muffin tray in the oven to warm up.
- Combine the eggs, milk, flour, sugar, vanilla essence and 1 tbsp of melted butter into a large mixing bowl. Wisk together (by hand or with a hand mixer) until well combined.
- Take the hot tray out of the oven, be carful not to burn yourself.
- Brush each muffin hole with the remanding melted butter so they are well coated.
- Fill each muffin hole half filled with the pancake mixture.
- Place in the oven to cook for 12-15mins or until they are puffed up and nicely golden brown.
- Serve hot straight from the oven with a good dusting of icing sugar, fresh strawberries and a drizzle of maple syrup.
