Strawberry Mini Dutch Pancakes

Serves: 9 pancakes

Ingredients 

  • 4 eggs
  • ¾ cup all purpose flour
  • ¾ cup milk
  • 1 tbsp sugar
  • 1 tsp vanilla essence
  • 2 tbsp butter melted and slightly cooled
  • pure icing sugar for dusting
  • Fresh strawberries cut in half or quartered
  • Maple syrup for serving

Method

  1. Pre heat the oven to 200C.
  2. Place a muffin tray in the oven to warm up.
  3. Combine the eggs, milk, flour, sugar, vanilla essence and 1 tbsp of melted butter into a large mixing bowl. Wisk together (by hand or with a hand mixer) until well combined.
  4. Take the hot tray out of the oven, be carful not to burn yourself.
  5. Brush each muffin hole with the remanding melted butter so they are well coated.
  6. Fill each muffin hole half filled with the pancake mixture.
  7. Place in the oven to cook for 12-15mins or until they are puffed up and nicely golden brown.
  8. Serve hot straight from the oven with a good dusting of icing sugar, fresh strawberries and a drizzle of maple syrup.
